Furmint is Hungary's signature white grape, best known as the backbone of Tokaji, the country's legendary sweet dessert wine made from botrytis-affected ("noble rot") grapes. Its naturally piercing acidity means it can also be made completely dry, giving structured, age-worthy whites with smoke, pear, and lime character.
