PenedèsXarel·lo is one of the three traditional grapes behind Cava, Spain's sparkling wine, prized for giving the blend body, structure, and aging potential alongside the lighter Macabeo and Parellada. Increasingly it's bottled on its own as a still wine, showing waxy, herbal character and firm acidity.
