Casablanca Valley, northwest of Santiago, is Chile's benchmark cool-climate region for white wines, its early-morning Pacific fog keeping temperatures down despite a latitude that would otherwise be too warm for delicate varieties. It's best known for crisp Sauvignon Blanc and Chardonnay, along with increasingly respected Pinot Noir.
