Airén is a hardy, drought-resistant white grape from central Spain's La Mancha region, historically the most-planted grape variety on earth by sheer acreage thanks to its use in everyday table wine and Spanish brandy. On its own it tends to make light, low-acid, fairly neutral wine, though modern cold-fermentation techniques have coaxed more fruit character out of it than older methods ever did.
