Assyrtiko is a Greek white grape from the volcanic island of Santorini, famous for holding onto piercing acidity even when fully ripe — a rare trick that gives its wines a bracing, saline freshness. Expect citrus flavors and a flinty, mineral edge, often with a briny, seaside quality reflecting the vine's volcanic soil. It ages well and is occasionally made into honeyed dessert wine too.
