Mavrodaphne is a Greek red grape used almost exclusively for a rich, fortified dessert wine — fortification means extra grape spirit is added during fermentation, which stops the yeast and locks in natural sweetness. The result is a dark, syrupy wine in the style of tawny Port, with deep notes of dried fruit and chocolate that build as it ages in barrel.
