Ribolla Gialla

White wine Friuli-Venezia Giulia

Ribolla Gialla is a light, high-acid white grape from the Friuli region of northeastern Italy and neighboring Slovenia, where it's called Rebula. Made the conventional way it gives a crisp, floral white that turns nutty with age, but the region is equally famous for fermenting it "on the skins" for weeks — an ancient technique that produces amber, more tannic "orange wines" with far more texture than a typical white.
