Savatiano

White wine

Savatiano is Greece's most widely planted grape, a drought-hardy vine grown chiefly around Attica that produces light, neutral, high-yielding white wine. On its own it rarely draws much attention, but it's the traditional base for retsina, where its mild character leaves plenty of room for the added pine resin to actually come through.
