Soave is a dry white wine from hillside vineyards around Verona in the Veneto, built on the Garganega grape, which must make up at least 70% of the blend. The best examples, from the volcanic and limestone soils of the Soave Classico zone, are prized for their fresh, almondy character and ageability compared to the region's more everyday bottlings.
