Kadarka

Kadarka is a historic Hungarian red grape once the backbone of Egri Bikavér ('Bull's Blood'), prized for its peppery spice and bright acidity. It fell out of favor in the 20th century because its thin skin makes it prone to rot and low yields, but a handful of producers keep it alive for its distinctively elegant, food-friendly style.
