Palomino

White wine Sherry

Palomino is a low-acid, fairly neutral white grape grown around Jerez in southern Spain, where it forms the base of nearly all sherry. On its own it makes undistinguished table wine, but its tendency to oxidize is exactly what winemakers exploit to create the tangy, savory character of fino and manzanilla sherry.

Also known as Fransdruif, Listán, Perrum, White French.
