Pedro Ximénez

Pedro Ximénez (often shortened to "PX") is a Spanish white grape usually dried in the sun after harvest to concentrate its sugars, then fortified and aged in a solera system into an intensely sweet dessert sherry. The result is a thick, almost black wine tasting of raisins, figs, and molasses.
