Pinotage is South Africa's signature red grape, bred in 1925 by crossing Pinot Noir with Cinsaut. It's naturally high in tannins — the gripping, drying sensation on your gums — which winemakers tame with shorter maceration, and it ripens early with high sugar, giving deep-colored, full-bodied wines. Its flavor can range from smoky bramble and dark fruit to a distinctive banana or tropical-fruit note, and it also turns up in rosé, fortified, and sparkling styles.
