Dornfelder is a modern German red grape, bred in 1955 to give German winemakers a deeply colored, structured red in a cool climate that usually favors delicate wines like Pinot Noir. It has thicker skins than most German reds, giving it medium-to-high tannin — the dry, gripping sensation on your gums — and a soft, velvety mouthfeel, with juicy dark-berry and cherry flavors. Most Dornfelder is made dry, though a lighter, fruitier style also exists.
