Amarone della Valpolicella is a powerful, high-alcohol red made by partially drying Corvina and Rondinella grapes for around 120 days before fermentation, concentrating their sugars and flavors into a rich, raisiny wine. Aged at least two years in wood, it's one of Italy's most sought-after and expensive reds.
