McLaren Vale, south of Adelaide, is a premium South Australian region for dry red wines, its Mediterranean climate and cool sea breezes off Gulf St Vincent giving structure to full-bodied reds. Shiraz dominates production, making up roughly 60% of the region's crush, followed by Cabernet Sauvignon and Grenache.
