Schiava is a light, pale-ruby red grape grown across South Tyrol in northern Italy, where it's traditionally the everyday sipping wine. It's low in tannin (the gripping sensation on the tongue that comes from grape skins) and body, making it feel almost as easygoing as a rosé, with a fresh strawberry character and a faint smoky, mineral note. In Germany, where the same grape is called Trollinger, versions can lean slightly off-dry.
