Corvina is the backbone grape of Verona's wines, prized for its thick skin, low tannin, and naturally high, tart acidity. Blended fresh it makes the light, cherry-scented everyday reds Valpolicella and Bardolino, but when the grapes are dried before pressing it transforms into the intense, dry Amarone or the lusciously sweet dessert wine Recioto della Valpolicella.
