BeaujolaisGamay is the light, juicy grape behind Beaujolais, made famous by the youthful, gulpable style of Beaujolais Nouveau. It has naturally high acidity and very little tannin — the gripping sensation from grape skins — which is why it's often best served with a slight chill, though top Cru Beaujolais sites (like Morgon and Moulin-à-Vent) coax out more depth, spice, and aging potential.
