Tannat is a thick-skinned, deeply colored red grape famous for having some of the highest tannin levels of any wine grape — tannin being the dry, gripping sensation on your tongue that comes from grape skins and seeds. It's the backbone of Madiran in southwest France, where wines can be intensely structured and built to age, while in Uruguay (its adopted homeland) it's often coaxed into a softer, more approachable style with gentler tannins and riper fruit.
