Pinot Gris is a pink-skinned mutation of Pinot Noir, and it makes strikingly different wines depending on where it's grown. In Italy, picked early as Pinot Grigio, it's light, crisp, and citrusy; in Alsace, it's richer, spicier, and almost oily in texture. Either way, the juice is pressed off the skins quickly, so the wine stays essentially tannin-free.
