Saperavi

Saperavi is Georgia's most important red grape and one of the few 'teinturier' varieties, meaning its flesh, not just its skin, is red, which gives its wines an exceptionally deep, almost inky color. It's a hardy, cold-tolerant vine that produces full-bodied wines with firm tannin and notably high acidity for a red grape, making it well suited to long aging. Depending on how it's made, Saperavi ranges from bone dry to semi-sweet, as in the popular Georgian styles Mukuzani (dry) and Kindzmarauli (semi-sweet).
